Chefs and Champagne 2009, Wolffer Estate, East Hampton
This past Saturday I attended an event called The Chefs and Champagne 2009 at the Wolffer Estate in East Hampton. This event was a very successful fundraiser for the James Beard Foundation. The James Beard Foundation was honoring Alex von Bidder and Julian Niccolini and the 50th anniversary of the Four Seasons Restaurant. There were many great Chefs from well known restaurants such as Daniel in New York City all the way to Bartolotta at The Wynn in Las Vegas. I had the privilege to interview and meet many of these great chefs during the event. This was an awesome event that had many local Vineyards and Champagne companies there. Even though I was not able to drink, my parents enjoyed it. But who needs the elegant wines and champagnes when there are many delicious and exquisite dishes. The Four Seasons had a Raw Bar with Oysters on the half-shell. The Oysters were fresh from Greenport and were served with two different types of vinagrettes. One consisted of diced apples, which I found to be the best one, and the other one was a classic red wine vinaigrette. Three types of Ceviche were presented at this Raw Bar; Octopus, Stripe Bass, and Salmon Ceviche. All Ceviche was prepared with different flavors; Salmon with passion fruit, Octopus with classic citrus, and finally Stripe Bass with a little spicy side. The Four Seasons was under the command of Chef Fred Mero.
Another delightful dish was prepared by Paul Bartolotta from the restaurant Bartolotta in Las Vegas. Chef Bartolotta made a juicy pan seared scallop topped with a piece of Parmigiano Reggiano Cheese. On the side were porcini mushrooms with a very nutty flavor, which really complemented the seared scallop. Another dish that really made your taste buds go crazy was a Cold Watermelon Soup with Lump Crab Meat. This soup also contained coriander seeds which come from the herb cilantro. This delicious Watermelon Lump Crab Meat Cold Soup was prepared by Marc Forgione who owns Marc Forgione in New York City.
